Creamy Pumpkin Pasta


• 2 teaspoons of olive oil

• 1 finely chopped onion

• 2 crushed garlic cloves

• 500g pumpkin – peeled and chopped

• 50 – 100ml whole milk

• 2 tablespoons of tomato purée

• 2 tablespoons of mascarpone

• 350g of any pasta of your choice

• Grated parmesan

1. Heat up your olive oil, and then fry your onions with a dash of salt for 10 – 15 minutes until the onions have softened. Then, add in your crushed garlic, and keep frying for another minute. Turn the heat off and allow this to cool.

2. Cook your chopped pumpkin in boiling salted water for 10 – 15 minutes, until it’s tender. Drain the pumpkin and put this into a blender. Then, give it a blitz with milk and onions until you have a smooth blend. Throw that into a large frying pan, and mix in the tomato purée and mascarpone, and make sure it simmers over low heat.

3. Cook your pasta in boiling salted water. Drain your pasta, whilst leaving some salted water to the side. Toss the pasta into the sauce that you’ve just cooked, then thoroughly mix in the salted water and grated parmesan.

4. Your pasta is now ready to serve. Feel free to scatter some more parmesan on top.

Stewed Apples


• 3 apples – peeled, cored and chopped

• 2 – 4 tablespoons of caster sugar or light soft brown sugar

• 1 tablespoon of lemon juice

• ½ teaspoon cinnamon

1. Cook your apples with sugar, lemon, and cinnamon in a small pan with 1 tablespoon of water for at least 5 – 10 minutes over medium heat. Make sure that you stir throughout, and that the apples are tender after you cook them.

2. And it’s as easy as that – your stewed apples are ready to eat. Feel free to serve them with yogurt, granola, pancakes, or any of your favourite baked goods.
